Notes on this recipe…
This recipe was adapted from the recipe in the fantastic book ‘Good to the grain’, I loved everything in the book but this is my quick go to recipe for cookie.
I have tried to write this out as simply as possible. I get this cookies on the table in about 25 minutes even if my kids are ‘helping me’!
This recipe made about 22 cookies which were about 4 inches in diameter. You can make them bigger or smaller just adjust the cook time.
I have also frozen this cookie dough and it works like a dream, I ball up dough and wrap it individually when I need a couple of cookies I whip some out and cook them about 15 mins in a preheated oven.
These cookies are not that sweet and I like to use dark chocolate chips. Any size will do.
I used unsalted butter and raw brown sugar, I like my cookies grainy!
